Description
Parés Baltà is a family owned winery whose origins go back to 1790. Winemakers with a lifelong tradition but with young and fresh ideas, the company is now run by the 3rd generation, under the management of Joan and Josep Cusiné and the unconditional help of their father Joan Cusiné Cusiné. The Winemaking is in the hands of their Wives, Oenologists, Ma Elena Jeminez and Marta Casas. The Vineyards have been cultivated in an ecological way since origin and biodynamically since 2012. The soils are fertilised by the flock of sheep that they keep and also Bees to help pollinate the grapes.
Produced from 67% Merlot and 33% Cabenet Franc, a cold pre-fermentation at 8 degrees is allowed for 5 days to extract aromas and colour. The two varieties are fermented separately at a controlled temperature of 25 degrees for 19 to 24 days. The wine is aged in French Oak Barrels for 13 months. The result is a rich ruby red colour with black tones. The aromas are rich and complex with notes of Forrest fruits and a lovely spiciness leading to a luscious soft palate with complex but balanced structure and a persistent but extremely pleasant finish.
Pan fried and baked duck breast served with sweet sauce with berries or Mature Blue Cheeses.
