Description
Cultivated since Roman times, Ribeira Sacra’s steep terraced vineyards are some of the most picturesque and treacherous to work in the world of wine, viticulture here is difficult and takes determination to achieve success. Pedro Rodríguez de Guimaro descends from a long line of colleiteiros working in the Amandi area, with vineyards planted on slate facing south, just above the River Sil.
Before 1991, Pedro’s family produced small amounts of wine for their own consumption and sold their wine in garrafones to local canteens. He was a winemaker from León and would soon be a close friend of the family, Luis Buitrón, who helped the Rodriguez family start bottling their wines. They called their winery Guímaro, which means “rebel”, in the nickname of Pedro’s grandfather. Guímaro was one of the first adegas to join the denomination in 1996.
Gradually old-fashioned winemaking methods were recovered: with fermentations, stepping with their feet in open containers and scrape (stems) inclusion, work with low sulphur content and aging in used barrels. The wines of this area, of low production but high quality, were praised even by the New York Times in 2009 and is now one of the flagship wineries of Ribeira Sacra.
Produced from 100% Godello this unoaked wine is fresh and aromatic with aromas of green apple and herbs leading to flavours of apple, and citrus fruits. Finishes with clean crisp minerality that lingers for a while.
Great served with Asian cuisine, Grilled Salmon, Spiced Chicken.
