Description
This superb wine from Burgundy has aromas and flavours of luscious red fruits and black cherries, complemented by hints of spice and sous bois. It is balanced by a bright acidity and completed by a long mineral finish.
The 1er Cru Bois Chevaux is the product of vines that are sixty to eighty years old. Hand-picked grapes are fermented in 100-year-old wooden fermenters using only natural yeasts. Ageing too takes place in old oak barrels allowing the wine to develop subtle flavours and soft tannins.
The Thenard family has owned land in Givry since 1760, but the estate was not officially founded until 1842. Over the years the estate has expanded to become one of the most important estates in Burgundy. The heart of the domaine remains in Givry, however, and has been under the direction of Baron Jean-Baptiste Bordeaux-Montrieux (his grandmother was a Thenard) since the early 1980’s. Their approach to winemaking remains traditional, respecting time-served methods and recognising the importance of the stewardship of the land.
This wine is excellent with braised meats, such as beef, and slow-cooked poultry as well as rich vegetables dishes and aged cheeses.
