The Opportunist Shiraz is mind-blowing – so say the producers, and we are inclined to agree. This wine is everything you would expect from an Australian Shiraz, and more.

Description
Wild & Wilder (founded by Giles Cooke and Fergal Tynan) produce wines that are all about quality with a good measure of fun thrown in – as they say themselves: ‘Great fruit, grown by great people and made with a lot of love by people who know that wine is all about enjoying good times and creating great memories.’
The Character Series, of which ‘The Opportunist’ is one, is a collection of wines that are crafted from grapes grown across South Australia. With the focus on working with the right variety in the right region – this Shiraz is from Langhorne Creek – long hours are spent in the vineyard to ensure that the grapes are picked at just the right time to ensure the wines are vibrant, well balanced energetic and true to their variety. Hugely characterful, humorous and individual, their approachability belies the care and attention that is given to each wine.
This rambunctious Shiraz has just a dash of Grenache to soften the palate to give an aromatic wine with flavours of ripe cherries and blackcurrants layered over coffee, dark chocolate, and liquorice with hints of mint and pepper. Eight months on old oak increases the texture and develops varietal nuances.
This wine is great with beef stews, entrecôte or a crispy Thai beef salad.
