Wild and Wilder is located in the Adelaide Hills were they also source fruits from Langhorne Creek, Clare Valley to craft there quality wines. Founder and Winemaker, Giles Cook MW together with his co-founder Fergal Tynan MW met whilst taking the 1st year of their Master of Wine course where it became inevitable that they would one day make wine together. Both have winemaking, and wine consulting experience in Europe, South America and California however their love and enthusiasm of Australian Wines led them to produce their own.
Every vintage of Tabula Rasa is unique. The 2017 vintage is from delicious old vine Grenache, with a small amount of Mataro with minimal intervention and no fining. This vintage is deliciously smooth and rich with a soft red colour and aromas of cherry, blackberry with a little vanilla. The palate is packed with plums and cherries, complemented with soft tannins and a hint of spice on the finish.
Perfect with Barbequed Meats, Pizza, Chargrilled Vegetables.
