Description
This is a small organic estate of a dozen hectares in the beautiful countryside of the high Languedoc to the north of Beziers growing grape varieties typical of the Saint-Chinian area. Thierry Navarre is the third generation of his family to work their vineyards. With 12 hectares of vines planted on large terraces The culture of the vineyard is to care for and respect the ground, the natural cycles and the seasons. No chemicals are used on the vines; they rely on simply composted, natural preparations and plant infusions. Harvesting is carried out manually by just 7 people. Thierry Navarre is a man with a passion for producing wines with minimal intervention.
Once destemmed, the grapes are fermented in cement before ageing in a 8,000-litre wooden foudre for twelve months. This wine truly expresses its terroir, the blend of very old Carignan vines with Grenache and Syrah brings warm notes of black plum, cherry, hints of herbs, thyme and rosemary which follows through to the palate bringing a lovely roundness with hints of spice and a lengthy finish
Delicious with barbecued meats, cassoulet, and slow cooked lamb.
