The 15th Century Manor House “Novaia” is located in the Marano Valley in Valpolicella Classica. The Vaona family moved from the city in the 1700s to the house and purchased the surrounding lands. By the 1800s the family had expanded and became one of the most prominent landowners with the Estate producing grapes, wine, olive oil, corn and silkworms. In the late 1800s early 1900s, Paolo Vaona moved the business forward commercially and became the first in the region to bottle and sell wines outside the province, winning awards and appreciation on national markets. Now in the fourth generation, the estate has converted to organic production.
Produced from a blend of Corvina, Corvinone and Rondinella, the grapes are manually harvested in late September and naturally dried for 100 days. The grapes are then de-stemmed and soft crushed during the winter and fermented in temperature controlled ok vats for 30 days. Aged for 2 years in oak barrels and 8 month in the bottle. The wine is a deep garnet colour with intense aromas of black cherries with spicy notes of dark chocolate and tobacco. due to the ageing. The palate is pure velvet and balanced with intense mineral notes and a delicious persistent finish. This wine has the capacity to age for 10 years or more.
Serve at 18 degrees, decant 1 hour before serving.
