Ilatium was created some 40 years ago by the Morini family which is now in the hands of the seven brothers and cousins. A small farm but with enthusiasm, a love for country life and cultivation of the vine Ilatium is a company that has grown over time, acquiring plots of land over the years as as it moved forward. Today 40 hectares of land are cultivated directly divided between the Valpolicella and Soave area. The vineyards, located in three nearby geographical areas, but with completely different microclimates and soils, provide the possibility of obtaining grapes with different organoleptic characteristics from time to time, with differentiated ripening periods, such as to allow better logistics on the occasion of the hectic harvest days.
Healthy fruit at peak ripeness is hand harvested and air dried for 100 to 120 days in small baskets. Fermentation takes place for 20/30 days at temperatures between 18 and 25 degrees. The wine is aged in French and American oak for 30 months the 10 months in the bottle. The Wine produced is garnet red in colour, the aromas are rich and intense with notes of ripe red berries and cherries with a hint of nutmeg. The palate is warm and full-bodied full of rich fruit and spice with vanilla notes. Smooth and elegant tannins complete the experience.
