Domaine Chofflet is located in the Givry appellation centered in the middle of the Cote Chalonnaise which lies south of the famous Cote de Beaune in Burgundy.  The 100 year old Chofflet-Valdenaire estate is located in the hillside hamlet of Russilly,  a magnificent setting in the shape of an amphitheatre and with a beneficial microclimate.  Denis Valdenaire  a former alpine Ski instructor, took over the family estate (from his father-in-law) in 2000 after working with him since 1987. In 2017, his son in law, Jonathan Brunot , 32 years old, joined Denis for the harvest. He took the reins fully in 2018, following Denis’s retirement.

Produced from 100% Pinot Noir for 30 year old vines, the fruit is de-stemmed and given 5 days cold maceration after which fermentation is at a controlled temperature not exceeding 28 degrees.  Half of the cuvee is aged in 228 litre oak casks, the remainder matured in concrete tanks.  A lucious deep red colour with aromas of crushed forrest fruits with raspberry highlights.  Light and juicy on the palate with lovely raspberry and red cherry flavours, this wine is beautifully balanced with delicious soft tannins finishing with a hint of vanilla.

A perfect accompaniment to Charcuterie and Mature Soft Cheeses, Roasted Vegetables, Grilled Lamb, Grilled Salmon.
