Bodegas Tradición is a relatively new winery located in Jerez, but its history dates back to being one of the oldest wineries in the Jerez production area. The Bodega was founded in 1998 by Mr. Joaquín Rivero, who decided to give continuity to the family tradition in the sherry industry.  The origins of Bodegas Tradicion are based on “Bodega CZ, J.M. Rivero”, the oldest of the sherry houses known, with business dated back in 1650. J.M. Rivero was, by appointment, supplier of the Royal Houses of Spain and Portugal and the winery obtained many different international rewards.  From the outset, Mr. Joaquín Rivero’s idea was to engage exclusively in the marketing of very old wines, but it wasn’t until the year 2000 that the VORS and VOS categories were officially recognised by the Jerez Regulatory Board. Much expansion has taken place since then, Joaquin Rivero passed away in 2016 succeeded by his daughter Helena company now sells its products in over 25 countries and receives over 600 visitors every year.

This is a wine in full maturity, the result of lengthy ageing under “flor” – a veil of yeasts, in American oak barrels using the solera and criaderas system. Very dry, it denotes a salinity, complexity, intensity and length that is hard to compare, offering a long persistence on the palate. This is a rare breed of fino that is pure, serious and traditional.

 

Should preferably be enjoyed cool, in a wine glass. Extraordinary when combined with nuts, pickled goods, seafood, fish or dried, salted food.
