Description
Quinta de Couselo is located in Santa María de Oia, a monastery built in the 12th century facing the Atlantic Sea, between the towns of A Guardia and Baiona. Although the estate has been making limited production wines in the O Rosal sub-region for more than 150 years, it was only in 2013 that it was taken over by Grandes Pagos Gallegos de Viticulture Tradicional, an initiative carried out by a group of winemakers and vine growers who want to boost native varieties in those areas where they can best express themselves. Influenced by the Atlantic Ocean, the micro-climate is abundant rainfall with plenty of sunshine need for the ripening of the grape. Although not certified Organic, All viticultural practices are chosen to be fully compatible with the protection and improvement of the natural environment. Harvesting takes place in the second half of September when the grape has reached optimum ripeness.
Harvested manually, the grapes are 100% destemmed, lightly macerated in cold storage before pressing. After fermentation at low temperature, the wine is aged on lees for 4 months, prior to clarification, sterile filtration and then bottling. A lovely pale yellow with hints of green the aromas are of green apple, lemon and lime. The palate is crisp and refreshing with highlights of citrus with a little floral hint in the background leading to a lovely lingering finish.
This wine is an excellent accompaniment to grilled, pan-fried or spicy fish and shellfish.
