Description

With 370 hectares of vines, the Domaines Francis Abécassis are today one of the largest independent producers in the Cognac appellation. As Francis himself says: ‘I have the belief that blending eaux-de-vie coming from one single exceptional estate gives the Cognac an unmistakable character and strength’. Faithful to this philosophy, his daughter Elodie had the idea to apply it to the distinctive taste characteristics of honey. It was during the ageing process that the Cellar Master, Isabelle Couprie, blended a subtle and elegant Cognac with a particularly intensely flavoured honey produced in the heart of the Charente forests.

The Abécassis family devotes particular attention to the vines in order to obtain healthy and balanced grapes. Sustainable growing methods are used in order to best respect the environment and the vineyard. Every gesture is therefore thought through with a view to producing a wine with respect for the terroir and nature. At maturity, the Ugni-Blanc grapes are harvested plot by plot and immediately pressed on site in order to avoid the transport and overly long treatment procedures. This care and precision extends throughout distillation and ageing to produce Cognac of elegance and distinction.

 

Old gold amber colour. The aroma brings notes of spice, liquorice, orange peel and even dried figs. In the mouth, the aromatic strength of this Cognac is exceptional and opens up with notes of hazelnut, walnut, cedar wood then candied fruits with  great length character.
