The Levasseur Estate is run by David Levasseur, a steadfast nonconformist. His micro-grower Champagne house, which was established by his grandfather in the 1940s and which takes its name from his father Albert, produces little more than 30,000 bottles per year from his own 4 hectares of vineyards spread over 18 organically farmed plots around the villages of Cuchéry, Fleury-la-Rivière and Châtillon-sur-Marne.
Crucially, David gives a leading role to the Meunier grape – so often relegated to the wings – which flourishes in the cool climate of David’s oldest plot, Les Gautelleries, planted in 1973, resulting in a star-quality production.
This beautiful Champagne is produced from 50% Meunier, 30% Chardonnay and 20% Pinot Noir. An elegant salmon pink colour with lovely aromas of dried fruit and biscuit with hints of raspberry. The palate is touched with exotic fruit with hints of vanilla. Complex but well balanced this rose is elegant through to the finish.
This is a stunning aperitif but also perfect Chinese cuisine.
